For cakes of 15-20 g

Preparation

60 g almond powder
120 g sugar
40 g flour
15 g honey
110 g egg whites
100 g Liquid clarified butter 99,9 % fat
  • Mix together the ground almonds , the sugar, the flour and the honey in a bowl using a whisk.
  • Fold in the egg whites with a spatula and finish with the slightly warmed Clarified Butter.
  • Place in the fridge for a few hours.
  • Pour into silicone moulds.
  • Bake in the aven at 180 °C for around 15 minutes (depending on the size of the moulds).
